Roasting a turkey isn’t an easy thing to do. It’s very easy to overcook the bird, but you definitely want it to be safe to eat and cooked all the way through. That’s a tough balance to achieve. All cooks have their own secret to the perfect holiday turkey. Some baste throughout the cooking time, while others swear using a brine is the best way to a moist turkey. Me? I put pats of butter (an entire stick’s worth of them) under the skin all over the bird, concentrating on the breast meat. That makes for a very juicy and tasty turkey. There's also the question of "to stuff, or not to stuff?" I don't stuff, but that's just my personal choice.
