Cook Up This Guinness Beef Stew For St. Patrick's Day!

I was never a fan of beef stew until I had this recipe. It's just so extra with a bottle of Guinness beer added to it! Of course everything tastes better with a little booze right?! I'd love to say I created this recipe myself but I did not. I found it on Brown Eyed Baker's website, and it is absolutely fantastic! Get ready to be in the kitchen for a while though because it does take quite some time to cook, although for much of the time it's in the oven.

You start it on a stove in a large oven safe pan or Dutch oven, and then after you add in all the ingredients except the carrots and potatoes, you move it to the oven to cook for 90 minutes at 325 degrees. Then add the potatoes and carrots and cook for at least another hour. I probably did another hour and a half or more until the potatoes and carrots were tender.

It says not to use Guinness Extra Stout because it's too bitter, but that's what I used and it's still tasty. I also like to add a little garlic salt for extra flavor.
